Cucumber Tomato Salad with Maple Dressing

Ingredients
For the Salad
1 pound cherry tomatoes halved, about 2 cups
1 medium English cucumber peeled and cubed, about 2 cups
1/2 medium red onion thinly sliced, about 1/2 cup
1/4 cup chopped parsley

For the Dressing

1/2 cup olive oil
1/4 cup red wine vinegar
 3 tbsp Plew Farm maple syrup plus extra to taste
1/8 tsp ground black pepper more to taste
1/8 tsp salt more to taste

In a large bowl, toss all of the salad ingredients until well blended.
Place all dressing ingredients in a small bowl and whisk until smooth. Pour dressing over salad and toss. Let sit 5 minutes to lightly marinade salad before serving.
Refrigerate remaining salad in a covered container for up to 3 days.
