Ingredients
4 large baking apples (Honeycrisp or Cortland), cored
1/3 cups old-fashioned oats
1/3 cups Plew Farm maple syrup
3 tablespoons unsalted butter, softened
1/3 cups chopped walnuts or pecans
1 teaspoons ground cinnamon
1/3 teaspoons ground nutmeg
1/3 teaspoons salt
1/2 cups apple cider or water
Instructions
Preheat and prep apples: Preheat oven to 375°F. Core the apples, leaving the bottom intact to form a well, and place them upright in a baking dish.
Make the filling: In a small bowl, mix old-fashioned oats, butter, softened, chopped walnuts or pecans, cinnamon, ground nutmeg, salt until it forms a crumbly paste. Stir in half of the maple syrup.
Fill and drizzle: Spoon the oat mixture into the center of each apple, pressing gently to pack. Drizzle the remaining maple syrup over the tops.
Add liquid and bake: Pour apple cider or water into the bottom of the baking dish. Bake until the apples are tender and the filling is golden.
Rest and serve: Let apples cool for 10 minutes before serving. Spoon the pan juices over the top, and add a scoop of vanilla ice cream if desired.
