Ingredients
6 ripe peaches, sliced
1/3 cup Plew Farm maple syrup
1 tbsp lemon juice
1 tbsp cornstarch
1 cup old-fashioned rolled oats
3/4 cup all-purpose flour
1/3 cup maple sugar
1/2 tsp cinnamon
1/4 tsp salt
8 tbsp cold unsalted butter, cubed
1/3 cup chopped pecans (optional)
Instructions
Preheat and prep peaches: Preheat oven to 375°F. In a large bowl, toss peaches, sliced (peeled or unpeeled) with Plew Farm pure Vermont maple syrup, lemon juice, and cornstarch until evenly coated. Pour into a greased 9x9-inch baking dish.
Make the topping: In a separate bowl, mix old-fashioned rolled oats, all-purpose flour, maple sugar, teaspoons ground cinnamon, salt. Cut in unsalted butter, cold and cubed with a fork or your fingers until the mixture is crumbly and pea-sized. Stir in chopped pecans (optional) if using.
Assemble: Sprinkle the oat topping evenly over the peaches.
Bake: Bake until the topping is golden and the peach filling is bubbling at the edges.
Cool and serve: Let cool for 10 minutes before serving. Delicious warm with a scoop of vanilla ice cream, drizzled with extra maple syrup.
