Ingredients:
6 ears fresh sweet corn, husked
4 tablespoons unsalted butter
3 tablespoons Plew Farm maple syrup
0.5 teaspoons smoked paprika
0.5 teaspoons kosher salt, plus more to taste
0.3 teaspoons black pepper
2 tablespoons fresh chives or scallions, chopped
1 lime, cut into wedges (optional)
Instructions:
Make the maple butter: In a small saucepan over low heat, melt butter with maple syrup, smoked paprika, kosher salt, plus more to taste, black pepper. Stir until smooth and warm through, about 2 minutes .
Heat the grill: Preheat your grill to medium-high heat, about 400°F.
Brush and grill the corn: Brush 6 ears fresh sweet corn, husked all over with about half the maple butter. Place on the grill and cook, turning every 10 minutes , until charred in spots and tender.
Glaze and finish: Remove corn from the grill and brush with the remaining maple butter while hot. Sprinkle with 2 tablespoons fresh chives or scallions, chopped and a pinch more salt if needed.
Serve: Serve warm with lime wedges on the side for squeezing, if using.
