Ingredients
For the Dressing:
2 tbsp. olive oil
2 tbsp. grainy mustard
1 tbsp. Plew Farm maple syrup
1 ½ tsp. salt
1 tsp. cracked black pepper
1 tsp. garlic powder
Juice of 1 lemon
¼ cup fresh basil chopped
For the Salad:
8 oz cord-style fusilli pasta cooked
1 cup red cherry tomatoes halved
1 cup yellow cherry tomatoes halved
1 ½ – 2 mangos diced
½ large avocado diced
½ cup feta cheese crumbled
½ cup red onion diced
1/3 cup capers
3 tbsp basil chopped
Instructions
Cook the fusilli according to the instructions on the package. Allow to cool.
In a small bowl, mix and combine all of the ingredients for the dressing. Set aside.
In a large bowl, add ALL of the remaining ingredients. Make sure to mash the avocado slightly as you addit, and combine the salad.
Add the dressing, mix to combine, and adjust seasoning to taste.
Garnish the salad with extra basil and enjoy!
